Vegan “Fois Gras” by Christina Gurunian
60% of my diet is purely vegan , 20%-25% eggs,cheese & animal derivatives and roughly 15%-20% animal meat (vast majority of this being fish).Don’t get me wrong I love a good steak,fois gras and kebab on charcoal barbecue (when you’re born in the Middle East,you cannot not love Meshwi-Arabic for barbecue) ,however the idea that these animals have to suffer so much just for our gastronomic pleasure makes it hard to swallow . Thus, personally I try to consume meat and animal derivatives as less at possible.
So here’s yummy plant based protein packed goodness that has a similar look, texture and taste as the famous fois gras.
Ingredients
- 1 onion, peeled and diced
- 4 Tbsp olive oil
- Garlic cloves peeled & sliced 3-4
- 2 tsp chopped thyme
- 1 can of red kidney beans
- 1 cup of cooked lentils(I like to mix red & brown)
- 150 g toasted walnuts
- 2 Tbsp beetroot purée
- Black pepper, to taste
- 2 teaspoons of cognac
Method
Sauté the onion in olive oil until translucent.Add the garlic, herbs.Add the Cognac and turn up the heat. Remove the pan from heat and let cool.
In a food processor, process the beans, the cooked lentils, walnuts, beetroot purée, and black pepper until almost smooth.
Refrigerate ,decorate as pleased in above photo I garnished with pomegranates and arugula, you can also serve it with sourdough bread or French baguette.
